Quick tortellini

This tortellini dish was a try out but became popular on BlueSky so I spent time to perfect it. It’s now a firm favourite in our house.

I created this dish because I had some tortellini left and wanted to have a quick meal. I originally used frozen grean beans because they are delicious and I always have them in the freezer as backup vegetables. It seemed a bit odd to me but it worked and was delicious.

I then shared a picture of the dish on BlueSky and — to my surprise — it got a lot of positive responses! That encouraged me to keep making the dish and perfect the steps so I could record it and type up the recipe.

Two weeks ago I found myself again with some tortellini but also a courgette that really needed eating. So I decided to swap the green beans for the courgette in the dish. My partner loved it.

So now we have two versions — courgette or no courgette. Up to you.

I have also used plantbased chorizo sausages (my favourite are the squeaky bean cooking chorizo) but you can use tofu instead. It’s added for protein and the chorizo gives a little extra spice.


Quick tortellini

5 minutes preparation + 25 minutes cooking — serves 2

Ingredients

  • 120 grams frozen spinach (c. 4 blocks)
  • 2 courgettes (or 300 grams frozen green beans)
  • 1 red onion
  • 4 cloves of garlic
  • 175 grams cherry tomatoes
  • 1 can good quality chopped tomatoes
  • 1 pack tortellini (250 grams)
  • 1 pack plant-based chorizo sausages (or tofu)
  • 1 tsp maple syrup
  • Oil
  • Optional: salt and pepper

Preparation

  1. Preheat the airfryer to 180 degrees.
  2. Cut onion in half, half again and cut into slices.
  3. Cut courgette into bite-sized pieces.
  4. Quarter the cherry tomatoes.
  5. Slice chorizo sausages (or cut tofu in cubes).
  6. Fry the sausages in the air fryer for 8min on 180 degrees. Keep aside. If using tofu instead, mix the tofu with a bit of oil and salt and pepper before putting them in the airfryer.

Preparing the sauce

  1. Heat oil in a pan and once hot, add the garlic and onion. Fry for 5-8min on medium high heat to soften the onion.
  2. Add the courgette to the pan, increase the heat slightly, and fry for about 4min until the courgette has some browning. Alternatively, break green beans in half and fry on a higher heat to defrost.
  3. Add the frozen spinach to the pan and fry for c. 4 min to defrost, mixing through the vegetable mix.
  4. Add the can of chopped tomatoes and bring to a boil.
  5. Add the maple syrup to the tomato sauce, add salt/pepper to tast (optional).
  6. While preparing the sauce, bring 1l of water to boil in a kettle.
  7. Cook the tortellini in a pot with the pre-boiled water for 4min. Drain and set aside.

Bringing it all together

  1. Add the chorizo, fresh tomatoes and tortellini to the sauce pan. Mix through gently.
